Edge Grain

Edge grain is the narrow face of a board running parallel to the grain -- what you see looking at the edge of a plank, as opposed to its wide face grain or its cut end grain. An "edge grain" cutting board is built specifically to show this face on top, using strips oriented on edge for a durable, tight-grained surface that's a step up from a face-grain board but not as wear-resistant as true end grain.
